Tonight’s Free Dinner For Cancer took place at the Bit and Spur Restaurant and Saloon in Springdale, Utah. The Bit and Spur made for a memorable Martin's Ride night. The outside of the restaurant has a log-cabin look. We could see why the Bit and Spur is a local favorite all year long. The restaurant's interior features different artists throughout the year. We sat on the Bit and Spur's extensive patio seating. We couldn’t pass it up on such a gorgeous night.
Our seats looked out upon the giant white and red cliffs of Zion National Park. Zion makes Springdale one of the best towns in Utah. We munched on chips served with a moderately spicy homemade salsa. The chips and dip matched our glasses of authentic tart hand squeezed lemonade. The Bit and Spur does everything from scratch even their bittersweet lemonade. It was easily the best I’ve lemonade I've had so far on our cross country trip.
I ordered house smoked pork ribs glazed with red chili barbecue sauce. The ribs fell right off the bone and tasted great along with my black beans and rice. Jeremy ordered the special, halibut with pickled beats snow peas and mango salsa. He wolfed it down and remarking many times how well-cooked the fish was. Martin tackled the Chile Verde, a spicy green chili and pork stew with flour tortillas, black beans and rice. After we finished eating, we talked to Alex, the restaurant manager. Alex told us that the Bit and Spur had been going strong for nearly thirty years! If you are looking for I can fine-dining near Zion National Park the Bit and Spur is the place. Zagat Restaurant Guide agrees, awarding it a “excellent” rating.
